The bar

Our bar program collaboration with Alfie Turnshek is rooted in the appreciation of utilizing fresh ingredients and an advanced culinary technique to achieve sustainability in what can sometimes be a wasteful area of restaurant operation. The menus include thoughtful preparations, both spirituous and non-alcoholic. We are creating an accessible bar program where no one's beverage choice is an afterthought.

What is plant forward?

A plant-forward diet is a dietary approach that emphasizes the consumption of mostly plant-based foods, while still including smaller amounts of animal products if desired. Unlike a plant-based diet which may exclude animal products entirely, a plant-forward diet focuses on increasing the proportion of whole, minimally processed plant foods in one's diet while reducing the intake of animal-based foods.

The concept of a plant-forward diet is based on the idea that increasing the intake of plant-based foods has various health benefits, such as reducing the risk of chronic diseases like heart disease, type 2 diabetes, and certain types of cancer. Plant-based foods are typically rich in nutrients, fiber, and antioxidants, and are also lower in saturated fat and cholesterol compared to animal-based foods.

In a plant-forward diet, plant-based foods like fruits, vegetables, legumes, nuts, seeds, and whole grains are emphasized as the foundation of meals, while animal-based foods like meat, dairy, and eggs are consumed in smaller quantities or used as flavorings or condiments rather than the main focus of meals.

Overall, a plant-forward diet is a flexible and balanced approach that encourages the consumption of more plant-based foods while still allowing for the inclusion of animal products if desired.

We work with farmers to utilize cuts of meat that would typically go to waste, keeping the sustainability cycle moving.

 

Stemple Creek -  A local Petaluma farm certified organic and with zero carbon footprint. They use regenerative farming techniques. Read more about Stemple creek here

Liberty Farms - A local Petaluma farm Liberty Ducks year-round, on straw litter, in an open environment with minimal intrusion. Liberty Ducks receive no antibiotics or hormones and are fed a diet that consists largely of corn and other grains. Read more about Liberty Here

Coastal Hill - a local Petaluma family organic chicken farm that takes a compassionate Approach

We take pride in our approach to farming:

  • Certified Organic pastures

  • No antibiotics, hormones, or stimulants, ever

  • Sprouted organic barley fodder during drought

  • Vegetarian supplementary diet

  • Full access to pasture to eat grass and bugs

  • A variety of heirloom/heritage breeds with a colorful array of eggs

  • Modernized traditional egg ranching: mobile coops, truly free range

  • No forced molting; birds are treated as naturally as possible

  • No dyes or feed additives to make eggs look better than they taste

  • All birds are grown on site from day one
